The Mexican Wedding Cake

As mentioned in my previous post, the traditional Mexican wedding cake is a subject that deserves a post all to itself! The wedding cake is another part in the well known array of Mexican wedding food. It is frequently a fruit cake that has been soaked with a special kind of rum. There are all kinds of ways to add a little pizzas to your Mexican wedding cake, try consulting with a local bakery for ideas on decorating and preparing your cake like the locals do.
The Mexican wedding cake also often comes in the form of what we know to be a Swedish tea cake, Viennese sugar bell and Italian butternut. These are round pastry balls which look like snowballs. They are stacked high on a tray and serve as the ultimate wedding dessert. Also included are Pastelitos De Boda and Mexican cookies which have nuts in them. Made with walnuts, pecans, or almonds, they're a sweet way to thank guests for sharing the day.
